How to Pickle Tomatoes at Home

Transform your fresh tomato harvest into delicious pickled preserves that last all year. Our step-by-step guide makes it simple, whether you're using cherry tomatoes or larger varieties.

What You'll Need

- 2 lbs fresh tomatoes (Roma or cherry work best)

- 1 cup white vinegar

- 1 cup water

- 2 tablespoons salt

- 2 tablespoons sugar

- 2 cloves garlic

- Fresh dill

- Sterilized jars

The Process

  • 1. **Prepare the brine**: Combine vinegar, water, salt, and sugar in a saucepan. Bring to a boil.
  • 2. **Prep the tomatoes**: If using larger tomatoes, cut into wedges. Cherry tomatoes can be left whole but pierce with a knife.
  • 3. **Pack the jars**: Layer tomatoes with garlic and dill in sterilized jars.
  • 4. **Add the brine**: Pour hot brine over tomatoes, leaving ½ inch headspace.
  • 5. **Process**: Process in a boiling water bath for 10 minutes.
  • Storage & Serving

    Your pickled tomatoes will be ready to eat in 24 hours but get better with time. They'll keep for up to a year in a cool, dark place and make excellent additions to salads, sandwiches, and charcuterie boards.
